Well, you have the freedom of changing your secondary profession at will. Don't think you're tied down to one secondary. For PvP, I tend to stick with W/A, W/E, and W/Rt, however for PvE I stick with W/Mo or W/Me. All depends on what you're running. It's a group effort, so make sure if you're healing, you have a good damage output coming from the 1-7 other players on your team.

I've heard you can change your second profession, but I heard you can only change it once per character! Is that true, or can I change my second class as many times as I want?

As many times as you want. Once you've gotten "Closer to the Stars" or have Ascended, you can recieve more secondary classes. Once you obtain them, you can change between them freely, but on that character only.
So, if you unlock Ranger as a secondary on your Warrior, your Elementalist can't run Ranger until they've unlocked Ranger on that one. Get the idea?

Yeah, I get that now. =) One more question though... If I'm a W/E and become a W/R, I will obviously lose all my Elementalist skills. However, if I switch back to a W/E, will I regain all of the Elementalist skills I had before?

Yeah, the skills you unlock for that character remain unlocked no matter what, and if you switch back to W/E they'll all be there.

....What? Why are you healing?
W/E D-slasher with conjure xxx is probably the highest DPS build for PvE you can get on a warrior.

Secondary does not matter, you can change it easily and only need a few skills of the secondary anyway. But getting all three conjures is not a bad idea of you go W/E.
I suggest to get a sword for PvE. I personally favored axes for a long time, but there are some really awesome builds possible with swords and PvE skills
1. Dragon Slash
2. Sun and Moon Slash
3. Whirlwind Attack
4. Brawling Headbutt (KD)
5. Steelfang Slash
(gives 5 Adrenaline, 10 with FGJ - repeat 4./5. or charge 1. and then 4. again - permanent KD)
6. Flail OR Rush
7. "Save Yourselves" (you are able to keep it up even longer than the 20 seconds of FGJ with careful 4./5. combos.)
8. "For Great Justice"
You can also run a Conjure Dragonslash Warrior, so W/E works in PvE as well. But some areas feature heavy enchantment removal, and it usually hits you first, so take this as an alternative.
Triple Chop / Cyclone Axe / Whirlwind Attack / Dismember makes for a good axe combo with a zealous axe.

Well, I managed to beat Thirsty River on an IWAY W/E with Meteor Shower and a bunch of other elementalist skills...
In all honesty though, don't go down that road. You'll have much more fun spitting out high damage as a conjure/Triple Chop or conjure/dragon slash. W/E can also be an Obsidian Flesh tank.
Straying a little off-topic, I once had a W/E with 61 energy and Mind Shock. Managed to beat a few monks that way.

I do too, but as long as they know what they're doing and have a decent damage output, I'm forgivable against Wammos. It's not Mending I use, but Mending Touch for condition removal, exactly as it was said above.
